The honor of making stuffing
« on: November 24, 2009, 06:54:19 AM »
So, moving up in the ranks of the family turkey day...

While my sister has been given the prestige of making the turkey(and it is fantastic the way she does it) I have been afforded the opportunity to make the stuffing.  Interestingly the stuffing at our house has never been stuffed in the bird and is always served separately.

I know how to make stuffing, but I was curious if anyone had any tips, special ingredients, or ideas to just make it better.

I mostly rely on sage, cornbread(which I make), onion, and celery, :)

Ok, I was hesitant about sharing my secret, as I have kept my secret recipe under wraps for a long time.  I have fought off ninja assassins, warlocks, and orgres to defend my recipe.  Elves have offered me eternal life in exchange for it, but I still refused.  However, my ISY Family goes above and beyond all of those, so I offer it to you now...

I love cornbread stuffing, I just don't like sausage in my stuffing,

 As far as making stuff,

I do have a few things I am asked to make, since I am pretty good at cooking,  better than the wife, just don't tell her that ;)
I am normally asked to make the turkey,  I smoke it.  I also make a few small cuts in the skin over the breast, slide in a mixture of bbq spices and butter, then smoke it for how ever long is required ( due to size of the bird). Yummy,  I love smoked turkey, chicken, pheasant.

Mmmm.....I am getting hungry already. My mom does all the cooking, I used to deep fry the bird, but grease cost, burn danger, and my ineptitude have caused me to return that duty back to mom. She is coming over here in a few hours with the birds and the rest of the food. She also makes homemade noodles which I love.

DId you have a mando themed turkey day?

lol

I did make it, it was well received, shockingly.  My sister made stuffing as well, and due to not being good at math, made 12 lbs of hers, lol.

We also had a smoked turkey, which was ok, but I prefer baked, :)

CS!!

if that is true, then

CSOTM!

Walnuts pure and simple, add those to the Turkey Stuffing your making, just make sure they are chopped finely.
