Well! Darth neo, Wait no more. Here is my Jedi in Knights Armor, just a repainted Ripcord W/ Lightsaber and A shield from AC. Moore Hobby Store Toys.

I still want to add something to his Armor, But can't think of anything. I was thinking at first to turn him into a training jedi armor.
But then I saw A Knight, like in King Arthur. Here are some pics.

I love it! love the concept of jedi KNIGHTS that actually look like midevil knights.  I might have to actually steal this idea from you too!  Great stuff.  It'd look great battling against one of the concept stormtroopers that have the sheild and sabre too.
