Made a couple custom jedi yesterday, first off a custom female Ishi Tib.
She features a ball jointed head now that I modified the original by drilling the hole wider (about the exact same size as the neck nub so it's very snug), and put enough clay inside so it the heads sits where I want it, then moved it around to round out the inside. Worked perfectly, and look at the side pic the head only covers enough of the nub to stay on, so there is a huge range of motion to it. I also cut the hands off the Ishi Tib figure, glued the hands on the base, and then sculpt the lower arm to her new hands to make her as accurate as possible.
And if anyone is interested, she's listed here:

One of my disappointments with figures with legs like this is that hasbroken never made them fully articulated, even if the rest of the figure is, ex. geonosians, wioslea, Voolvif Monn. So I though I'd do it myself. I took the upper arm of the base figure, put it in where the knee was, then turned the lower leg of the base figure backwards, and attached it to where the elbow would go (adjust the feet accordingly). Really wasn't difficult at all, and he stands just fine, curious to why hasbroken never did this.
Anyway, if anyone is interested he's listed here:
